Instructions
- 1Preheat oven to 400°F. Line baking sheet with parchment paper.
- 2Cook rice per package directions. Black rice can take 30 minutes to cook so plan accordingly.
- 3Pat salmon fillets dry, lightly coat with olive oil then top with a small amount of salt. Place on baking sheet and cook for 20 to 25 minutes until flakes easily with fork.
- 4With 15 minutes left, prepare the broccolini. In a pan, add 1 tbsp olive oil and heat on medium-high until shimmering. Add the broccolini and cook until al-dente. Remove from heat.
- 5Serve salmon immediately with broccolini and black rice sprinkled with pine nuts on the side.
