Why I created this site
Hi, I'm Tracy Elsinger. After years of unexplained digestive discomfort, severe morning fatigue, and frustrating doctor visits, I was directed to low-FODMAP eating. While managing carbohydrate fermentation helped my gut, it wasn't the complete answer.
I was still waking up crushed with fatigue, reacting heavily to "FODMAP-safe" portions of tomatoes, vinegar, aged cheeses, and healthy home-cooked leftovers. That is when the missing puzzle piece clicked: my body wasn't reacting to healthy sugars, but to histamine and food maturity.
These recipes work when standard templates fail. They are designed for people with complex sensitivities who need fresh, low-acid, low-histamine meals that protect both their digestion and their sleep architecture. Low-FODMAP friendly? Often. But engineered primarily to be clean, fresh, and chemically non-triggering.

My Journey to Understanding My Sensitivities
For years, I struggled with unexplained fatigue, brain fog, joint stiffness, and constant digestive discomfort. I visited countless doctors, had every test imaginable, and everything came back "normal." I was told it was stress, or age, or just something I'd have to live with.
I refused to accept that. I started experimenting with my diet—eliminating foods, trying different approaches, keeping detailed journals. I tried the low-FODMAP diet and it helped... but not completely. I was still having reactions to other foods like fodmap-safe portions of tomatoes, vinegar, and certain spices. That's when I realized my sensitivities were more complex than any single diet could address.
This site is the resource I wish I had during those difficult years. Every recipe here has been tested on my own sensitive stomach with multiple sensitivities. I know how frustrating it is to follow a low-FODMAP recipe perfectly and still feel awful. These recipes work when others don't—they're designed for people whose digestive issues don't fit into neat categories.
