Ingredients
- 1/3 cup rice, uncooked
- 6 oz chicken breast
- 1 tbsp olive oil
- 1/8 tsp salt
- 1/2 cup carrots, shredded
- 1/2 cup English cucumber, chopped
- 1 tbsp chopped parsley
Instructions
- 1Cook the rice according to the package directions.
- 2While the rice cooks, slice the chicken into bite-size pieces and season with the salt.
- 3Heat the olive oil in a skillet over medium heat and cook the chicken until fully cooked through and lightly golden.
- 4Divide the rice, chicken, carrots, and cucumber between bowls or containers.
- 5Top with parsley and serve right away, or cool briefly and freeze the extra portion immediately.
This is the kind of lunch that helps during the first phase of a low-histamine trial: straightforward protein, easy starch, and crisp vegetables.
Keep the flavor simple and rely on freshness. Eat it the day you cook it, or freeze portions right after cooling instead of treating it like a normal fridge leftover.
