Ingredients
- 1 lb ground beef
- 6 corn taco shells
- 1 cup lettuce, sliced
- 4 tbsp plant-based sour cream
- 1 cup cheddar, shredded
- 2 tbsp radishes, shredded
- 1 tbsp chili powder
- 1/2 tbsp smoked paprika
- 1 tsp cumin
- 1/4 tsp chipotle powder
- 1/4 tsp salt
Instructions
- 1Preheat oven to 350°F and place the 6 corn taco shells on a cookie sheet to warm through, about 5 to 7 minutes. Turn off the oven but leave the shells inside to keep warm.
- 2Heat a pan over medium-high heat and add the 1 lb ground beef. Brown the meat until cooked through, breaking it up as it cooks. Drain any excess liquid.
- 3Add 1/2 cup water to the browned beef, then stir in the chili powder (1 tbsp), smoked paprika (1/2 tbsp), cumin (1 tsp), chipotle powder (1/4 tsp), and salt (1/4 tsp). Simmer over medium heat until the sauce thickens, about 3 to 5 minutes.
- 4Assemble each taco by placing approximately 4 tbsp of the seasoned beef into each warm corn shell. Serve with the butter lettuce, plant-based sour cream (4 tbsp total, divided between both servings), shredded cheddar (1 cup total, divided), and shredded radishes on the side so each person can customize their tacos.
