- 2 red bell peppers, diced
- 1/4 cup dried lentils (green or brown)
- 1/4 cup farro
- 3 tbsp olive oil, divided
- 2 cups kale leaves, chopped
- 1/4 cup fresh parsley, chopped
- 1 cup feta cheese, crumbled
- 1/4 cup dried cranberries, unsweetened
- 1 orange
- 2 tbsp green onions, minced
Instructions
- 1Prepare lentils and farro per package directions. Start with the lentils and then add the farro to the same pot when the appropriate amount of time is left to cook the farro. When done, drain the cooked lentils and farro and transfer to a large mixing bowl.
- 2While the lentils and farro are cooking, heat 2 tbsp olive oil over medium-high heat in a pan.
- 3Cook the green onions for about 2 minutes until softened.
- 4Add the kale and diced bell peppers and cook for another 2 to 3 minutes, until al dente on the peppers. Don't overcook.
- 5Transfer the vegetable mixture to the mixing bowl with the lentils and farro.
- 6Add the fresh parsley, crumbled feta cheese, and dried cranberries.
- 7Whisk together 1 tbsp olive oil with the juice of the orange until emulsified.
- 8Pour dressing over ingredients in the bowl and stir to combine.
- 9Spoon the mixture into bowls for serving.
