Ingredients

  • 1 small bag small red potatoes (about 1.5 lbs)
  • 1/4 cup olive oil
  • 1.5 tsp salt
  • 1 tsp Italian seasoning
  • 1/4 cup coarse grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Cut potatoes into quarters and place in a large bowl.
  3. In a small bowl, combine olive oil, salt, and Italian seasoning.
  4. Pour oil mixture over potatoes and toss to coat well.
