Ingredients
- 1/2 lb large scallops
- 2 tbsp olive oil
- 1/2 tsp dry mustard
- 1/2 tsp ground coriander
- 1/8 tsp salt
- 1 cup quinoa
- 2 tbsp pine nuts
- 1 tbsp green onions (green parts only), sliced
- 1 tsp olive oil (for quinoa)
- 2 tbsp fresh mint, finely chopped
- 1 tsp sumac
- 2 cups papaya, diced
Instructions
- 1Cook quinoa per package instructions (usually about 15 minutes).
- 2Once quinoa is done, combine with pine nuts, 1 tbsp sliced green onions and 1 tsp olive oil.
- 3Combine dry mustard, coriander, and a dash of salt in a bowl.
- 4Pat scallops dry with paper towel (this is crucial for a good sear).
- 5Drizzle scallops with 1/2 tsp garlic-infused olive oil and sprinkle with the spice mixture.
- 6Heat 2 tbsp olive oil in a skillet over medium-high heat until shimmering.
- 7Reduce heat to medium then cook scallops for 2 to 3 minutes per side until golden brown crust forms.
- 8Toss together diced papaya, 2 tbsp mint, and 2 tbsp olive oil. Sprinkle with Sumac.
- 9Serve scallops over herbed quinoa and papaya salsa
