Ingredients
- 2 medium fennel bulbs, thinly sliced
- 2 clementines
- 1/4 cup Kalamata olives, sliced
- 2 tbsp unsalted pine nuts
- 2 tbsp Parmesan, shaved
- 1 tbsp parsley, chopped
- 1 tbsp mint, chopped
- Dressing
- 2 tbsp olive oil
- 2 tbsp orange juice
- 1 tsp maple syrup
Instructions
- 1Thinly slice the 2 medium fennel bulbs and place in a large bowl.
- 2Peel and segment the 2 clementines, removing any seeds and excess white pith.
- 3In a small bowl, whisk together the olive oil, orange juice, and maple syrup to create the dressing.
- 4Pour the dressing over the sliced fennel and toss gently to coat. Add the chopped parsley and mint, and toss again.
- 5Arrange the dressed fennel on serving plates or a platter.
- 6Top with the clementine segments, sliced Kalamata olives, pine nuts, and shaved Parmesan.
- 7Serve immediately.
