Ingredients

  • 1 lb chicken breast
  • 2 cups butter noodles
  • 1.5 tbsp olive oil
  • 1/4 cup sliced green onions (green parts only)
  • 5-6 carrots, sliced
  • 4 cups chicken bone broth
  • 3 sprigs fresh thyme or 1 tsp dried
  • 1 cup frozen peas
  • Salt to taste

Instructions

  1. Bring 4 cups chicken bone broth to boil in a Dutch oven. Add chicken breast and cook for 15 minutes.
  2. Break chicken apart into pieces while cooking. Drain broth and set chicken aside.
  3. Add olive oil to the pot and heat over medium-high. Add green onions and carrots, cook for 5 minutes.
  4. Add chicken bone broth and thyme. Bring to boil, then cook for 8 minutes until carrots are al dente.
  5. If using noodles, cook them separately in the broth during this step.
  6. Stir in cooked chicken, peas, and salt. Cook for 15 minutes.
  7. Remove thyme stems before serving. Allow to cool slightly before serving.
