Ingredients
- ✓1 lb chicken breast
- ✓2 cups butter noodles
- ✓1.5 tbsp olive oil
- ✓1/4 cup sliced green onions (green parts only)
- ✓5-6 carrots, sliced
- ✓4 cups chicken bone broth
- ✓3 sprigs fresh thyme or 1 tsp dried
- ✓1 cup frozen peas
- ✓Salt to taste
Instructions
- 1Bring 4 cups chicken bone broth to boil in a Dutch oven. Add chicken breast and cook for 15 minutes.
- 2Break chicken apart into pieces while cooking. Drain broth and set chicken aside.
- 3Add olive oil to the pot and heat over medium-high. Add green onions and carrots, cook for 5 minutes.
- 4Add chicken bone broth and thyme. Bring to boil, then cook for 8 minutes until carrots are al dente.
- 5If using noodles, cook them separately in the broth during this step.
- 6Stir in cooked chicken, peas, and salt. Cook for 15 minutes.
- 7Remove thyme stems before serving. Allow to cool slightly before serving.
