Ingredients
- 6 6-inch corn tortillas
- 1 tbsp olive oil
- 1/2 cup garbanzo beans, drained and rinsed
- 2 tbsp green onions (green part only), minced
- 1 cup corn (frozen)
- 1/4 cup radishes, shredded
- 1 cup Napa cabbage, sliced thinly
- 2 cups jackfruit (canned, green), drained and shredded
- 1/2 avocado, sliced
- 1 cup cheddar cheese
- 1 tsp cumin
- 1/2 tbsp paprika
- 1/4 tsp chipotle powder
Instructions
- 1Preheat oven to 400°F. Place tortillas on a baking sheet and bake for 5 minutes until crisp and lightly browned. Wait until you are almost done with the ingredient prep below before you put them in the oven to prevent them from getting over-heated.
- 2Heat olive oil in a pan over medium-high heat until shimmering. Cook green onions, cabbage and corn for 2 to 4 minutes to char the corn.
- 3Add the jackfruit, garbanzo beans, cumin, paprika, and chipotle powder to the pan and cook, stirring occasionally, until heated through (about 3–4 minutes).
- 4Assemble tacos by layering each tortilla with the corn-bean mixture, radishes, avocado slices, and cheddar cheese. Serve immediately.
