Ingredients
- 1 cup panko breadcrumbs
- 1/2 cup oatmeal
- 1/4 cup parmesan cheese
- 1 cup butter beans
- 1 cup zucchini (grated)
- 1/2 cup red bell peppers (minced)
- 1/2 cup carrot (grated)
- 2 tbsp green onions (green part only), minced
- 2 eggs
- 1 tbsp soy sauce
- 1/4 tsp red pepper flakes (optional)
- 1 tsp paprika
- 1/4 tsp salt
- 2 tsp mustard seed powder
- 1 tbsp olive oil
- Other
- 2 cups tater tots
- 2 cup frozen corn
- 1 package buns (optional)
Instructions
- 1Preheat oven to 350°F.
- 2In a small bowl, whisk together the eggs, soy sauce, pepper flakes, paprika, salt, mustard, and olive oil; set aside.
- 3In a large bowl, combine the panko breadcrumbs, oatmeal, parmesan cheese, butter beans, grated zucchini, minced bell peppers, grated carrot, and minced green onions.
- 4Pour the whisked egg mixture into the large bowl with the vegetables and grains. Stir until all ingredients are evenly combined.
- 5Using your hands, mold the mixture into 3–4-inch round patties.
- 6Heat the remaining garlic-infused olive oil in a large skillet over medium-high heat.
- 7Once hot, carefully place the patties into the skillet and cook for 2–3 minutes per side until lightly browned.
- 8Transfer the browned patties to a baking sheet and place in the preheated oven for 15 minutes until cooked through.
- 9Remove from oven and serve on buns (if using) or alone, alongside the corn and tater tots, with lettuce as a wrap or side.
If preparing in advance, make the veggie patties and then freeze. Thaw in the fridge the day of preparation and then cook as instructed below.
