Instructions
- 1Preheat oven to 425 degrees (note: this step is unusual for a stovetop pan fry and does not appear to be used in subsequent steps; you may omit it).
- 2Bring a pot of water to boil. Add the glass noodles and green beans and cook until noodles are nearly done, about 4 minutes. Drain the noodles and beans, rinse under cold water, and set aside.
- 3In a small bowl, combine the soy sauce, 1 tsp sesame oil, sugar, and 2 tbsp of water.
- 4Add the remaining sesame oil to a stir fry pan over medium-high heat. Add bell peppers and snow peas and cook for about 3 minutes. Add carrots, mushrooms, and bok choy along with the sauce mixture. Cook for 3 to 4 minutes until vegetables are al dente (tender but still slightly firm).
- 5Add the cooked glass noodles, green beans, and chopped macadamia nuts to the pan and heat through for 1 to 2 minutes until everything is warmed and combined. Serve immediately.
